Easter is the time where eggs are the most present food. In the bodybuilding world, it is the perfect time to spice up your foods with egg-cellent meals. Eggs are high-quality protein, they are filled with nine amino acids that our body doesn’t provide. Not only are they delicious but they are the ideal food for muscle development – muscle repair, growth and maintenance. Our body can easily digest and absorb it, as well as it is nutrient rich with A, D, E, B vitamins and minerals like iron, zinc and selenium, that not only supports our overall health, energy metabolism and muscle function but it’s also versatile and affordable.

  1. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray.

  1. Sauté spinach for about 60 seconds on medium high.
  2. Meanwhile whisk one egg and two egg whites (I used 1/2 cup liquid) in a bowl. Season to taste, then pour the eggs over the spinach and scramble them until eggs are set. 
  3. Once the eggs are done cooking, assemble your bowl. Add cooked rice, top with egg mixture, cheese, and salsa if desired.  


Grilled Chicken Salad with Hard-Boiled Eggs:


  • 4 oz grilled chicken breast, sliced
  • 2 hard-boiled eggs, sliced
  • Mixed greens (spinach, arugula, lettuce)
  • Cherry tomatoes
  • Cucumber, sliced
  • Balsamic vinaigrette dressing


  1. Toss mixed greens, cherry tomatoes, and cucumber slices.
  2. Top with grilled chicken slices and hard-boiled egg slices.
  3. Drizzle with balsamic vinaigrette dressing.

Afternoon Snack:

Egg Salad Lettuce Wraps:


  • 4 hard-boiled eggs, chopped
  • 2 tbsp Greek yoghurt
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves for wrapping


  1. In a bowl, mix chopped hard-boiled eggs with Greek yoghurt, Dijon mustard, salt, and pepper.
  2. Spoon the egg salad on lettuce leaves and wrap.


Salmon with Asparagus and Poached Eggs:


  • 6 oz salmon fillet
  • 1/2 bunch asparagus, trimmed
  • 2 eggs
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C).
  2. Season salmon with salt and pepper and bake for 12-15 minutes until cooked through.
  3. Steam asparagus until tender.
  4. Poach eggs until whites are set but yolks are still runny.
  5. Serve salmon with steamed asparagus and poached eggs on top.

Open-Faced Egg Sandwich with Hummus and Avocado


  • ½ cup hummus
  • 4 whole grain bread slices, toasted
  • 1 ripe avocado, pitted, peeled and sliced

  •  ¼ tsp salt
  •  ¼ tsp pepper
  • 4 hard boiled eggs, peeled and sliced


  1. Spread hummus evenly onto each slice of bread; top with avocado slices. Season with chilli powder, salt and pepper. Top with egg slices.
